Ingredients:

  • 2 cups boiled chickpeas (garbanzo beans)

  • 1 large onion – finely chopped

  • 2 medium tomatoes – pureed

  • 2 green chilies – slit

  • 1 tsp cumin seeds

  • 1 tbsp ginger-garlic paste

  • 1 tsp turmeric powder

  • 1 tsp coriander powder

  • 1 tsp garam masala

  • 1 tbsp Chana Masala powder

  • 1 tsp red chili powder (adjust to taste)

  • Salt to taste

  • 3 tbsp oil

  • Fresh coriander – for garnish

  • Lemon wedges – for serving

Instruction:


  1. Prepare the Base:

    I start by heating oil in a pan and adding the cumin seeds. Once they splutter, I add the finely chopped onions and sauté them until golden brown. The aroma of the onions cooking in oil is just divine and sets the perfect foundation for the curry.

  2. Add the Aromatics:

    Next, I add the ginger-garlic paste and the slit green chilies, letting them cook for a minute before stirring in the tomato puree. I let this mixture cook until the oil starts to separate from the masala base.

  3. Spice it Up:

    Once the tomato-onion mixture is ready, I add the turmeric powder, coriander powder, and red chili powder. After mixing well, I let the spices cook for a minute to release their flavors. Then, I add the boiled chickpeas, salt, and about a cup of water to achieve the right consistency.

  4. Simmer and Finish:

    I let the curry simmer for 10-15 minutes on low heat, allowing the chickpeas to absorb all the spices. Towards the end, I sprinkle garam masala and Chana Masala powder for that final burst of flavor. Before serving, I garnish it with freshly chopped coriander. A squeeze of lemon right before eating enhances the taste even more!
